Playtopia


Jaxon has been asking for a while to go to Playtopia. It's a really cool place out in Okotoks that has a big climbing structure and a ball pit and a toddler area. It's a great place for active kids to burn off energy! Jaxon loves it. It's sorta like Let's Play here in Calgary but smaller. Which is nice for me since its easier to keep an eye on him. Today was the first visit since Owen has been walking. Owen loved it too! He tried to escape from me on our way out and play some more. I am glad that there is a place like this since Jaxon is in Preschool out in Okotoks I will be taking Owen to Playtopia at least once a week to have some one on one time. (We will of course still take Jaxon every once and a while too!)
There is one down side to Playtopia. They dont allow outside food or drink in the place. they claim its because they want to keep it allergy free but even if you bring products that say on it "nut free" They wont let them in. If you want to eat or drink you have to buy there food, which of course is way overpriced. So I just make sure I plan our visit between meals and snacks and when the kids get hungry its time to leave.

A delayed Book Review

Ok... so I finished this book like a month ago... but I forgot to review it... and since I have had a crazy couple of days with Birthday BBQs I thought Id do it now...
  Fablehave book 5, Keys to the Demon Prison, was a really good book! After being disappointed with book 4 I was surprised at how well book 5 redeemed the series. I really enjoyed it. There were a fwe surprises and suspense. The only thing I didnt like was the love story part. I am trying to be vague because I dont want to ruin it for anyone, but Kendra gets involved with someone and I just thought that entire line of the story was not needed. It didnt ruin the book for me it was just sorta like the parsley on your plate at a restuarant... pretty but completely useless and not needed.
  It was a great way to end the series. I am always sad when a series ends because I want to know what continues to happen. I get involved in the characters lives. But this was a good ending, it left enough for you to imagine and wonder what happens next but ties up enough that you are left in total darkness wishing for a 6th book.
  All and all if you havent read this book go and start at book one. its a great series. And since its a youth book its one I can read quickly admist the distractions that is motherhood. I have added these books to my "To buy" list. They are really great!

An Extra Little Treat

Tonight was one of the three parties/BBQs I have planned for my little man's first birthday. Tonight was a great time with my side of the family. We are one goofy bunch. As an extra treat for this special occasion I added a little suprise to the cupcakes. I got the idea from Picky Palate (www.pickypalate.com)
Here is what you do.. make your favorite cupcake batter (I made snickdoodle because of my profound love for that cookie!) But a little bit of batter into the liners and then place a whole oreo ontop of the batter and then a plop of marshmallow fluff on top of the oreo. Then top with a bit more of the batter and bake. Then ice them and sprinkle with crushed up Oreos. They are pretty yummy!

Bulk Barn!

First I have to wish my littlest man a very Happy First Birthday! I can not believe this little man is already a year old! What a year it has been. I am so looking forward to all the wild adventures this little boy will bring into my life!

Mommy Loves You!

Now onto the most wonderful store ever... BULK BARN! I discovered these stores when I lived in Ottawa. It was love at first sight. its a store with rows and rows of bulk food. Candy, pasta, flour, candy, sugars, dried fruit, candy, baking stuff and did I mention Candy! Its wonderful. I bet you could find almost anything you need there. Well it has been so sad few years since I moved back to Alberta because we were Bulk Barn-less. But Now there is one really close to my parents place in Edmonton. (if there is one in Calgary its not by me... booo) Anyways... we took Jaxon there for the first time. He loved it too! He was thrilled to find these gummie snakes. We didnt think anything of them until we got home... they were 2 ft long each! good thing we only got 3 of them!
So if you are ever where a Bulk Barn is... GO! You will not regret it!

Iron Chef

I love the show Iron Chef America. I love the anticipation of waiting for the secret ingredient to be revealed and most times the wonder that follows "What is that?" or "What will they ever do with that?" I have found a recipe worthy of Iron chef America. Are you ready??? Today's secret ingredient is....Doritos!
Klingon Chicken (Dont blame me for the name... it was named that when I found it.)

3 Boneless, skinless chicken breasts
3 tsp Ranch Dip mix
3 egg whites

Coating;
1 cup finely crushed Doritos
1/2 cup grated Parmesan Cheese
1 1/2 tsp Ranch Dip Mix

1) Make the crushed Doritos. This can be done two ways... My mom used her food processor and it worked great. I Unfortunately dont have a food processor (I know... tears!) so I took chips, crushed them in my hands and then put them in a ziplock bag and rolled a rolling pin over them. Both worked just as well! So you choose! (its takes about 3 cups of roughly crushed chips to make 1 cup finely crushed.
2) Mix the coating and place in a shallow bowl
3) Beat the egg whites in a shallow bowl
4) Pat dry the chicken breasts with a paper towel. Dip them in to the eggs and then in to the Doritos. Pressing to ensure that they stick.
5) Place on a baking sheet sprayed with Pam and bake for 30 minutes at 350 degrees.

Its actually pretty good. We made this at first as a joke for my husband who loves doritos. But its pretty yummy. We have made it twice; once with the Ranch Flavor and then once with the Nacho cheese Flavor. I want to try it with the Sweet Chili Heat Flavor.

It sure is something different

Snickerdoodle S'more cookies

I love snickerdoodles! They are one of my favorite treats! I will eat an entire batch myself. HEAVENLY! I also love my new muffin top pan. (Thanks mom!) Hmmm....but I haven't used it to make muffins... HAHAHA... Put it is perfect for this little treat. Meet the Snickerdoodle S'more cookie. I'm not a huge S'more fan for two reasons; one... I dont do camping and smokey fire. Two... I'm not a huge graham cracker fan. I prefer something soft. So a switched out the cracker for a snickerdoodle. I KNOW!

Snickerdoodle S'more cookies

1)Make a snickerdoodle batter... here is my recipe

1/2 cup butter, melted
1/2 cup sugar
1/3 cup brown sugar
1 egg
1 tsp vanilla
1 1/2cup flour
1 tsp baking soda
1/4 tsp cream of tartar

1) Preheat oven to 325
2) Using an electric mixer on medium speed combine butter, sugars, eggs and vanilla
3) In a separate bowl combine flour, baking soda and cream of Tartar
4) Mix dry ingredients into wet ingredients until just combined

Topping;
2 Tbsp Sugar
1 tsp cinnamon

Ok, once you have the dough press some into the muffin top pan, until abotu 2/3 full, then sprinkle with the cinnamon sugar topping and add marshmallows and chocolate chips (add lots!)

bake for 15-20 minutes

Serve with Ice Cream

This is the recipe you will come to hate me for because you will make it all the time and eat it all! Like I always say "if i cant be thin, Ill make my friends fat!"

Homemade croutons

I am converted. I will NEVER buy croutons again! I thought making them homemade would be really hard. But when I forgot to pick some up for dinner the other day I was in a bind... so I made my attempt. VOILA! They are FABULOUS! Why are the better then store bought??? They are still soft in the middle so you can actually fork them as opposed to the dry as stone store ones. Plus you can change the flavour to what ever you like. The best part is they are so simple!!!

Here is what I did.. I diced up a few sliced of Ciabatta bread and put it in a bowl. Then I drizzled in Olive Oil and sprinkled them with Garlic Powder and Basil. Then I laid them out on a baking sheet and put them under the broiler. I watched them and every few minutes just gave the pan a shake until they were toasty!
Like I said before FABULOUS! They are all crunchy on the outside and all soft on the inside.
They were so good when I had them yesterday in out chicken ceasers that I made more ceasers today as a side to the Lasanga Ciabattas we had for dinner tonight. I am in love!

Family Pictures

I just had to share with you my wonderful family pictures. I am blessed to have many talented friends. One friend, Kim Hawkings is an unbelievably gifted photographer. No matter how many of her pictures I see Im still blown away by what she can capture with a lense. Kim, you are so gifted! A couple of weeks ago she did our family pictures and Ill admit I was worried as to how they would turn out. Jaxon, my three yr old, was miserable and not wanting to cooperate after the first few shots. But when I saw them I was reminded as to why she will always be my go to photographer! They are stunning!
Jaxon. This truly captures who Jaxon is. He is about to jump off a rock. Jaxon is a crazy jumping machine so I see this look alot.

What to Eat!

Have I mentioned that I love food??? Today I realized that my fridge and pantry are running low... ok low for me. Which means I can go grocery shopping! I love grocery shopping! So I figured since I was doing a big trip anyways I can get some of the stuff I was missing for extra yummy food. We will be eating good this week!

I taught in church today. I love teaching! It was on Elder Hales talk "Our Duty to God:The Mission of Parents and Leaders to the Rising Generation. It's a great talk. Strawberry Vanilla Recipe Krispies

Why is it that there seems to be so much better stuff in the States? I mean we live in Canada which really isnt that much different in most ways then the States and yet we are missing out. One of the things I always make my parents bring back from their stays in TX are Strawberry Flavoured Marshmallows. They are wonderful. What are they good for?? Making Strawberry Vanilla Rice Krispies! I am a sucker for Rice Krispies.. seriously I could eat an entire pan (in one sitting!) But these little beauties are even better then the orginals.
Strawberry Vanilla Rice Krispies

6 Cups Vanilla Rice Krispies
1 bag Strawberry Flavoured Marshmallows (make a visit and pick some up!)
2 Tbsp Butter/margarine

Melt butter in pot. Add Marshmallows and melt, stirring constantly. Add to Rice krispies and spread into a 9x13 pan.
I just wet my hands and then press into the pan and nothing sticks to me.

Are you wondering why there are no pictures??? I made it for my mom instead of a birthday cake (HAPPY BIRTHDAY MAMA) but we ate them all... no big surprise!

Anniversary Movie Review

Today was mine and my hubby's 6th anniversary! Happy Anniversary Sweetie... its been an adventure! To celebrate our big day we had my mom and dad baby sit the boys and we went out for Lunch and a movie. We say Inception. It was a really good movie. I never like going to a movie that is surrounded by hype because its so rare for it to live up to all the promises. So of course it wasnt as good as I thought it would be but I was surprised at how good it was. Im not a Leonardo DiCaprio fan but I think he did a really good job. It was weird because it was long (like 2.5 hours) but it wasnt too long. Does that make sense? I was really into it. But I wasnt surprised by the ending. For those of you that have seen it... Did the Top Topple??

Another Book Review

I am here to confess another obession...I love books. This also means that I love libraries. Curse my addictive personality! Many of you may be reading this and thinking... "What is wrong with this addiction?" Allow me to explain my dilemma. I am a mother of two small children (3 and 1) so taking the time to look for a book is not possible. So I have started to go online at http://www.calgarypubliclibrary.com/ and go to my account and just place a book on hold (even if there isnt a wait list) because then they put the book aside for me on a shelf with my name on it. That way I can just come in and grab my book, use the self check outs and be on my merry way. Are you still wondering what the issue is??? I now have a MASSIVE list of books waiting for me at the library or that I have checked out. And as a mother of a 3 yr old and a 1 yr old you can imagine how little time I have to read! So beware... there may be a book review overload the next few weeks as I frantically try to get all my books read!
   On to the Review... I read The short Second Life of Bree Tanner by Stephanie Meyer. Here is a little disclaimer... I have read the 4 twilight books... but I am not a fan. While a read them I couldnt put them down but once I stopped I thought back and realized how beyond stupid they are... really they are just a romance novel about a werewolf and a vampire and a girl... WAWAWA
   So onto Bree Tanner...What a waste of time! I read the book and was left with the question "Why?" "Why write this?" and"Why read this?" Really has the world become so involved in the lives of these fictional characters that you have to learn all you can about even passing characters? But I will say that Stephanie Meyer has found a cash cow and will ride it as long as she can. The only good quality about this book...It was short. I read it in three nights.

Book Review... Kid's Edition

I love to read and I love to pass that love onto my children. I love reading stories to my two boys. Jaxon loves story time and it has become a necessary part of bed time. Jaxon has found a new favorite book. It's Scuttle's Big Wish... and I cant for the life of me remember the name of the authors.. but its a father and son duo. (yes I am too lazy to go upstairs and check.. im that kind of mom!)
  Anyways..its a super cute story. It's about a mouse who wishes that everything he touches turns to cheese, but when his wish comes true he realizes it may not be so great. We read it at least twice every night. In fact Jaxon now has it completely memorized. He will "read" turn the pages at the right times. Its awesome. The only bad part is we got it from the library which means I need to find a copy we can keep at home. Anyone want to help me out??? PLEASE!

Calaway Park

A little over a week ago, one of my friends took us to Calaway Park. It was my Boy's first time at something like that. They had a Blast! Well really I think Jaxon loved it more then little Owen, but even owen seemed happy to watch and ride a few rides.
The Weather was perfect, and the drive wasnt as long as I thought it would be. We will for sure be getting passes next year and going often!

Jaxon rode this mini rollercoasted 3 times in a row. I think he would have gone more but I said it was time to move on!


Yes My 3 yr old is big enough for the free fall. I thought for sure he would cry, but he laughed and loved it!

So all you moms our there thinking "is my kid big enough!?" Jaxon is and he is only 39 inches tall! GO! Your kids will love you!

a new Menu and a new Goal

Here we are about to start another week. I always have a hard time getting back to life after a week at my mom and dad's, but it has to be done! So here is the food for the week!
Monday - Leftovers (my mom made a huge breakfast this past weekend so we will be eating that up!)

Thursday - Travel day (heading back to Edmonton)
Friday - Me and my hubby are going out to celebrate our anniversary
saturday - it's my mommy's birthday...Ill think of something to cook!
Sunday - Sacchatini (I didnt spell that right!)
Also... I have been carrying around an extra 20 lbs since I had my first little guy and I am sick of it. So I am determined to get it under control, especially before I head to vegas in May with my mom and toothpick sister! I have decided to take it in baby steps. I am making a 6 week plan and a 6 week goal and then Ill be doing that all over again until I reach my end goal. Wish me Luck!

World's Greatest Pizza

I love pizza. It's one of my favorite foods. I love how it can be different every night, depending on your mood and what flavours you are craving. For those of you living in the SW of Calgary (or those of you, like me, who are willing to drive to get amazing pizza) There is a fabulous pizza place in Cedarbrae. It's called Sammy's (yes there is one closer to Shawnessy... but you have to go to the one in Cedarbrae) Anyways, it's so good!
  Tonight I tired something new and I was beyond surprised. I'm not a big red meat fan. I love my chicken and so Chicken Pizzas have long be my favorites. BBQ Chicken, Fajita Pizza, Peanut Chicken. But I have a new favorite that beats out all the rest. Its a Donair Pizza. It was amazing. The sauce was to die for and the meat was so tender and wonderful. The crust is nice and crunchy on the outside and soft on the inside. I could not find a flaw with this pizza. I am so glad there is left overs for tomorrow!

One Last Fancy Drink

Royal Fizz

1 part orange Juice
1 part lime cordial
1 part raspberry syrup
soda water

Mix together and pour over cracked ice

Sober Moment

I am really enjoying trying all these new mocktails this week! I hope you are too! It always makes a meal seem extra special when you have a fancy drink to go with it. Tonights drink was a Sober Moment. It was pretty nice.. although my favorite from this week is still the roy rodgers!
Sober Moment

1 part orange juice
1 part lime juice
splash of grenadine
fizzy water

Mix together and pour over ice

Another Wonderful Drink

AHHHHHH.... I just got back from a first for me... a pedicure. It was heavenly! I have gone from a pedicure virgin to a pedicure addict in just 1 short hour! Now I look at my fancy red toes with little green flowers and think I should go to the beach to show them off. And That is what inspired me to post this delicious drink for you night.
Safe Sex on the Beach

1 part peach nectar
3 parts Orange Juice
3 parts Grapefruit Juice

Mix everything together and serve over ice.

Just a little warning to go along with this drink... its seperates. So it needs to be restirred often. But is sure is yummy.

Simple is Sweet

I love things that are simple! So here are two 'recipes' that are so simple I cant even call them real recipes. But they are both super yummy!
Roy Rogers

1 cup of Cola
a generous splash of Grenadine

Mix together in a glass with ice.

Yep that drink is just that simple... but its really tasty and Im not a huge cola fan. But I really was surprised at how much I like this drink. Ill make it again... as soon as Im done this post!

Roasted Cauliflour

Cut up a head of cauliflour into bite size pieces. Put in a ziplock. Drizzle with a little olive oil and sprinkle salt and pepper. Shake bag. Pour onto a parchment lined baking sheet and roast in the oven at 350 degrees... until browned and cooked.

I have to thank my friend Ashley for this one. I had a BBQ a while ago and this is what she brought as a side. I was utterly amazed! I am the anti cooked veggie girl. (I mean Ill do corn and asparagus... but not corn or beans or peas, etc etc) But I would have felt bad if I didnt at least try it. I am in love. I could eat this everyday! I am converted! You can cook veggies and still have them be yummy! Plus Owen loves it too! I havent convince Jaxon to try any yet but Ill just keep making it and eating his portion if he doesnt want it! SOOOOO GOOD!

June Bug

I love a nice, fruit, fancy drink. Mocktails are my favorite! Here is a very yummy and refreshing addition to a summer time meal!
 
June Bug

3 cups Ginger Ale
2 ½ Oz Grenadine
2 ½ oz frozen OJ
3 Scoops Orange Sherbert

Put everything in a blender and pulse until combined.



It's crazy simple, super yummy and even kid approved. Thats my 11 month old Owen scoring a taste from Papa! (he loved it bytheway!)

What to Eat This Week!

I am looking forward to this week because I am at my mom and dad's place in Edmonton. My mom is where I get my love for cooking and just being in a kitchen. So everytime we get together we have a blast trying tons of new recipes... most of our evenings are spent moaning and groaning that we ate too much... but we are always ready for the morning to come and to start it all over again. Jamaican Beef

This is a super yummy recipe. Traditionally the beef is cooked on a kebob with sweet potatoes, but I switched it up and made it on steaks with the Bang Bang Shrimp from a few weeks ago and had surf and turf! (Sorry no Pics!)
Jamaican Style Beef


¼ cup Soy sauce
2 Tbsp Veg Oil
2 Tsp Chinese 5 Spice
1 Tsp All Spice
2 Tbsp Hot Sauce


Whisk together and marinade over night
(makes enough for 1 ½ lbs of steak)

The only thing I did differently is I did all my stitching by hand... I think it makes a more authentic look because I dont know about you but ive noticed; its pretty rare for mother nature to make straight lines.

Quote of the day

I recently had a dicussion with my husband, it all started when I posed the question "Would you treat me any differently if I were dying?" He answered "Of course" I found that his response made me very sad. No one knows when life is going to end, I mean I could get hit by a bus tomorrow. I thought about this while we talked and have come to the conclusion that I would change very little about my life if I knew I was dying. I love life. (Sure I have my trials... but its all part of the life deal!) I would still make crafts, I would bake for my friends, Id cooke dinner for my husband, Id play hot wheels with Jaxon, and Id dance with Owen. I wouldnt plan any huge trips because I already am doing that. I want to fill my childrens heads with memories now so why would that change if I was dying.
  I am quite happy and content. I think everyone should live their life so that they are happy if they die tomorrow. I also think you should treat others as if they were dying. No Regrets!

Another card


The last time I was up at my moms I scored big time because she was getting rid of basicaly all her paper crafting supplies. I came home with a huge box of scissors, punches, paper, stickers, die cut and anything else you could imagine. This past long weekend I took some time and organized it all... ok most of it... I need another file system for all my stickers and die cuts... right now they are just in a drawer. Anyways.. Today I threw together what I think is a really cute card and I most if it is stuff from my mom. I think its pretty darn cute. Also I have fallen in love with vellum (thats how I did the stripping) anyways... I think Ill have to throw some more together using this super cute vellum!
Now I cant wait to get time to scrapbook!

Seven Pounds

  I love long weekends.. because Tim doesnt have to go to work. Love it! Yesterday Tim took the two boys to Okotoks to see his mom. Which meant I had the whole house to myself. So I surrounded myself with Felt and watched a movie while I made more felt food.
  I watched Seven Pounds. It was FANTASTIC! Now I didnt cry... but Im not a crier... but I loved it. I was angry with Will Smith Character because I become so attached. Will Smith did a fantastic job. This movie made me think of ways I could improve the lives of others. Id never go to the extreme that he did but I like to improve the lives of others. Plus Ill never look at a jellyfish the same way again! 
  If you have not seen it go and rent it and watch it. Its Amazing! I dont want to say too much and spoil it for you. But i LOVE it.
  Will Smith has come a long way from the Fresh Prince... but I still miss that show!

Maple Oatmeal Scones


I made these scones last week and fell in love with them! They are so yummy... and make a really good breakfast! I got the recipe from a Food Network Magazine... but I have tweaked it alot.

Maple Oatmeal Scones
3 1/2 cups Flour
1 cup Multigrain Flour
1 cup Oats (not quick cook)
2 Tbsp baking powder
2 Tbsp Sugar
1 cup cold butter
1/2 cup buttermilk
1/2 cup maple syrup
4 large eggs
2 tsp maple extract

1)Preheat oven to 400 degrees.
2) In a large bowl, using an electric mixer, combine flours, oats, baking powder, and sugar. Blend in cold butter on the lowest speed. Butter should be in pea sized pieces
3) Combine the buttermilk, syrup, eggs and extract and add to the flour mixture. Mix until just blended. The dough will be sticky!
4)using floured hands scoop out a small amout of dough and form a ball. Place on a cookie sheet.
5) Bake for 20 minutes until tops or crisp and edges are brown.
6) Top with following glaze

Maple Glaze
1 1/4 cups icing Sugar
1/2 cup maple syrup
2 tsp maple extract

1) Combine all ingredients in a microwave safe bowl.
2) Heat in a microwave for 15 seconds.
3) Drizzle over warm scones

Menu..mmmm

I love long weekends, because that means I have more time to get projects done! YAY! I am super excited about the menu for this week (almost as excited as I am about menu for the following week) Here is what to eat this week!
Monday - Spring rolls and rice
Tuesday - Red Hot Chicken Salad Sammies
Wednesday - I think my brother is coming over and cooking... if not then Borritos
Thursday - Szechwan Sliders (I can not wait!)
Friday - We are heading to Edmonton so probably McDonalds
Saturday - Jamacan Surf and Turf
Sunday - Chicken Milanese
