Tommy K Play

We discovered a new play place near our house. Its Amazing. Its called Tommy K Play and its on 130th (Ave?) It has it all... a HUGE climbing structure, a couple of X Boxes, cool cars to ride, a laser maze and even a toddler area. There are also super comfy seats for the grown ups to rest in. The only down side is that is expensive. Its $8.95 for any child under the age of 4... so it cost be almost $20 to get in. (The price goes up for older kids but since I dont have any I didnt take notice of how much) My Boys love it so we will have to make it a treat trip. I just can afford to go all the time like Jaxon now asks! LOL! But if you are looking for a way to have the kiddies burn some energy take them here... you can even climb and play too and burn some calories. Its funner then the treadmill!

We are nearing the end of the Baby Scrapbook. I am going to give it to Chelsea on Friday when I bring her dinner. That little baby of hers is adorable! Today was a decent day but one of those days were everything seems to take longer then expected. So this will be a less then exciting post as I need to clean my kitchen yet again, finish the laundry and put toys away before bedtime.
Hopefully tomorrow will be a more productive day!

Breakfast Pizzas

If any of you follow ourbestbites.com then you will know that she posted this a little while ago. I loved the idea and had to try it. I changed it a bit. One thing I did was add a little pit of pizza sauce. Jaxon needs things to look like what I tell him they are. So in order for him to believe that this was pizza I needed to add the red sauce. Also ourbestbites said to bake these on a cookie sheet lined with foil that has been brushed with Oil. Mine still stuck... REALLY stuck.. I think next time I will try parchment.

Breakfast Pizzas

Cut 6 english muffins in half. In a bowl beat two eggs and a splash (or two) of hot sauce. I broke this in half since I was feeding it to my kids. I did one egg with out hot sauce and then one egg with lots of hot sauce. Take the english muffin halfs and dip them (like you would french toast) into the egg mixture. Place on a bakign sheet lined with parchment (?), spoon a small amount of pizza sauce on top and then add topppings. I used turkey pepperoni, cheese and green onions. But I think bacon would be awesome too! Then bake in the oven at 350 until toasty and cheese is all melty. The muffins will still be a little soft but mostly toasty.
These warm up great the next day. Just pop them in the microwave for a few seconds. I also am told that they freeze good too... but we didnt have enough leftover for me to try that.

I really like these because they are so yummy! But also because of the hidden egg protein. Jaxon doesnt eat much protein so I like that he ate these and didnt even realize he is eating it.

P-S

Today has been a great day! Jaxon had preschool in the moring. Preschool days are always great days. Jaxon is always so happy those days. Non Preschool days are rough... all he does is ask to go to school and he acts out all the time. So M/W/F are awesome days. Me and Owen got lots of errands done. We went to Dollarama and got the things I needed for the RS activity in October and I got most of the things I needed for the Halloween party I have coming up too! Then it was time to go home and I got crafting done too... I am that much closer to completing a bunch of projects! HOORAY. Plus I got to watch Top chef! YAY! oh and then we went out for dinner and are now about to play Supermario Bros for FHE. What a great day!
So Ill be posting new recipes and projects starting tomorrow... but until then here are a few more pages for the ABC album

Inkspell

I DID IT! I finally finished Inkspell! I have been reading this book for almost a year! Let me explain though; it didnt take me that long because its a bad book or really long. Here is the story; I started the book shortly after having my second baby (Owen) there was my first mistake, what new mother of two has time to read?!?! I certainly didnt. Then I started requesting books from the Library and once one came in I had to stop Inkspell and read the Library book before I had to return it (since I couldnt renew it since there was a hold list!) But books just kept on coming in! So Inkspell kept on being put on hold. BUT ITS DONE NOW!
This is the second book in the Inkworld trilogy. It was great! Its a really easy read, hence it was nice for me since I could take long breaks from it and come back and not have to reread, I could just pick up where I left off. If any of you have read the first book, Inkheart, or seen the movie starring Brendan fraiser, this book picks up where that one leaves off. Meggie, Mo, Resa, Farid and Dustfinger and thrust back into Inkworld and have to fight to survive. I enjoyed this book more then the first book and I enjoyed the first book more than the movie.    It was nice to finally see Inkworld, since in the first book the characters all come to this world. I found it be a magical place. Your typical fairytale land if you will. Inkspell left me eager to read the next/final book Inkdeath. (but that will have to wait since I have more library books, plus the Necromancer and Mockingjay all patiently waiting on my shelf for me!)

I have been stressed out all day! Owen had his 1 yr shots tonight (yes I know he is almost 13 months... thats what I get for leaving it up to tim to book!) See I dont do needles. I get that they are important they just freak me out! Always have always will. So Tim was supposed to be there to hold my baby while the shots were given. but it was at school... so I called in Leah and she did the dirty work for me! LOVE YOU LEAH! So now Im tired from stressing all day and Im excited to watch all my new shows! So Here is more of the Baby Album

Door Names

I have finally finished the boys door names. It was a really simple project but one I just couldn't find time to get around to doing. But I finally got so sick of seeing it on my to do list so I just did it. All I did was find these letters at Micheals and then painted them. Simple! but I think they are cute.



Jaxon is obsessed with letters so he is constantly pointing them out. If Owen goes into his room he will escort him out and say "No see owen... J-A-X-O-N that spell Jaxon... O-W-E-N spells Owen"

Name Tags

My three year old has started preschool. He loves it. There is one downfall to the preschool thing... minor but still a problem; everything as to be labeled, back packs, shoes, jackets.. the works. Why is this a problem you ask....because Jaxon has a little brother who will one day inherit Jaxon's things. It's bad enough to have hand me downs... but hand me downs with someone elses name in them sucks bad. So I have been trying to come up with creative ways to label Jaxon's school stuff. One of the ways is with this super cute washers.

They are way easy! I love them. the best part is I can attach them to the zipper on his bags and on his jackets and take them off later. PERFECT! We have lost one already... but washers are so cheap that I can always make another one!

Kooza Review

So as most of you know I went to Kooza on Thursday night. IT WAS AMAZING! I was blown away. There really arent any words to describe how much I enjoyed it. They had awesome music and dancers and tiperope walkers and those crazy bendy people. There was this asian guy who piled up chairs and did crazy stunts on top. Of course there were clowns and a girl who did unbelievable things with hola hoops. My favorite was these two guys who did incredible things in these two rotating wheels. I was on the edge of my seat the entire time. If you ever get a chance to see Kooza or any other Cirque du soliel show GO! They are incredible.
  Kooza was a real return to the circus for Kooza. In previous shows it was much more story-ish and this one was more about the acts. There was a story along with it but to me it seems secondary to to the actual circus acts.
  of course the evening was even more fun because I went to the show with one of my long time best friends Leah. Whenever we get together its a riot! And the evening was less stressful for me because my other bestest friend Stef came to babysit my boys. I am pretty picky about leaving my boys with people especially around bed time so to have Auntie Stef and uncle jarett come over to watch them was an ease to my mind. Thanks guys! (Jaxon is still talking about uncle Jarett and wants to know when Auntie Stef with bring uncle jarett back!)

another late post

Sorry for another missed post... I don't know what happened last night but I was hit with a killer miagraine. So I took a nice long bath and went to bed. It was a nasty one. But here are a few more pages for the ABC Album I did. (sorry about the not so hot pictures, I need a better camera) But I thought it would be an appropriate since yesterday one of my friends, Claire's, water broke so she either had her baby last night or today, and Chelsea (who the album is actually for) is way over due and will be induced today, unless by some miracle she had the baby last night too!

Baby ABC Album

One of my good friends, Chelsea, is about to have a baby... actually as I'm blogging this I'm hoping she has already had the baby today since she is something like 8 days over due. Brutal! Anyways, I decided I'd make her an ABC album for the new little sweetheart. Chelsea is like the closest thing to a perfect mom I know. She is awesome so I wanted to do something... this is what I came up with. Here comes my disclaimer... Im not overly original, nor am I super scrapper... so its pretty run of the mill pages. Too Much Stuff

If you haven't already heard I am a huge Robert Munsch Fan. I love his books and have passed on that love to Jaxon. I do a book of the month with Jaxon and we focus on one theme (like cars, dinosaurs, etc) or author (Rober munsch) a year and every month he gets a new book. Its great. Anyways This year has been all about Robert Munsch.
   While we were in Edmonton this last time, Mama Nelson bought Jaxon Robert Munsch's newest book; "Too Much Stuff" It was cute and an enjoyable read... but I think Mr. Munsch is starting to loose his luster Im sad to say. This book was still about a bazillion times better them most Kid's books out there but it didnt compare to those long standing classics like "Paper bag princess" and "Thomas' snowsuit"
This book is about a little girl who takes all her toys on an airplane and all the fun things that happen because of it.

Robert Munsch is and always will be a children's literature guru to me. If you dont know... I write. It's been a long standing dream of mine to get a book published. Like robert Munsch I write children's books. I think Im pretty good. So who knows maybe one day someone will be reviewing my work! (so any one out there know of any publishers looking for some fresh talent?!?)

Let's Make Whoopie

These are so good! I have been wanting to make a whoopie pie of some sort ever since the book Whoopie Pies has been released... ok ever since I saw it in a store... Im pretty sure its new, at least newish... but maybe It's just new to me. I havent bought it and I couldnt find it at my library. So if any of my friends have it Id love to borrow it!

This is my version of a super duper whoopie pie. They are awesome! I cant believe how great they turned out! All I did was tweak one of my favorite cookie recipes and used the leftover cream cheese frosting from the cinnamon buns I made last week and voila... yet another reason why Im still carrying around so much baby weight (and my baby is 1 year old!)


Here is how its done!

Mint Brownie Whoopie Pies

Mix together;
3/4 cup Cocoa
3/4 cup margarine, melted
2 cups sugar
2 tsp vanilla
4 eggs

In a separate bowl mix together;
2 1/2 cups flour
2 tsp baking powder
1 cup mint chocolate chips
(for this recipe I used Andes mint chips... mand I wish I could get them in canada, but for now I have my mom ship them to me from texas)

Add this mixture to the cocoa mixture and combine.
Chill dough for 1 hour. Roll dough into balls and roll balls into icing sugar. Bake on a parchment lined baking sheet at 350 degrees for 8 minutes

Allow the cookies to cool.
Then just assemble the whoopie pies;
Frost the bottom of one cookie with the cream cheese frosting (see my cinnamon bun post for the recipe) and then gently press a second cookie to make a sandwich. This process has to be done super carefully as these are really soft cookies.
I need to find a different hobby... how will I ever lose weight making things like these everyday.... I love being in my kitchen!

Good Eats

This week is a try to use whats in the house week. I will still go Safeway but I wanted to use mostly what I had on had. So this weeks menu is nothing to get excited about;
Monday - Pasta bake
Tuesday - Chicken cesears
Wednesday - Borritos
Thursday - Im going to Kooza! But Ill make chipotle Glazed Chicken Wings for me and my Bestest buddy Stef (since she and her man are baby sitting for me!)
Friday - Florida Shrimp
Saturday - The Elders are over... lets make Parmesan Chicken
Sunday - The traditional Leftovers!
Kinda boring I know... but I am planning on making Mint Chip Brownie Whoopie Pies tomorrow... Ill let you know how that goes!
  Also today is Grandparents day! Did you know that?? I didnt know that in time so non of the grandparents in my life got anything special... wawawa... Guess Im not that great after all! But here is an online shout out to my awesome Grandparents! Grandma Shelva-- you are a saint; Grandpa Ray - I couldnt ask for a cooler person to be named after; Grandpa Ron - You will always be Rocky to me! Grandma Ollie - You are one sweet step grandma! Granpa Mike - Put down that camera!; and last but not least Grandma Ellen- You know how to rock it you Crazy Lady! And of course a huge hug to the grandparents of my boys! They love you so so much!

My Favorite Shrimp

All you mom's out there... is it just me or have you also ever just wanted a day off??? Dont get me wrong I love being a mom but sometimes I just want to have a whine/time out/diaper free day. Today was one of those days where I sat longing for some space. But I got over it!
  So tonight was out ward Chili cook off.. so I didnt cook dinner which makes me sad since I was really looking forward to my Pasta bake... oh well there is always next week! The recipe I have to share with you tonight is one of my childhood favorites. I always thought it was a special occassion when my mom would make this. I LOVE IT!
Florida Shrimp

1/3 cup lemon Juice
1/3 cup Orange Juice
1/3 cup Ketchup
1 clove garlic, minced
1 tsp dry mustard
1 Tbsp Worchestershire Sauce
1/4 cup Honey
1 cup Veg Oil
1/4 tsp Paprika
1 1/2 lbs Shrimp, peeled and deveined)

Mix everything together in a plastic bag. Let Shrimp Marinade for at least 1 hour. Heat a small amount of oil in a fry pan and pour contents of the bag into pan and fry until shrimp is cooked.

Now Im kind of craving this shrimp... Ill have to see if I can fit it in to my Menu next week!

Vietnamese Sammies

Before I share a tastey treat with you tonight I have to share my proud mom moment. My oldest little man Jaxon started preschool today. He was so excited! He has been wanting to go to school all summer. So it was no surprise when we dropped him off and he ran off with out a hug and no looking back. Then when we picked him up he was just has happy... he cant wait to go back! YAY!


Now... onto the food. Tonight's dinner was vietnamese Steak Sammies. I was planning on using the left over steak from the bulgogi in this meal too but I ate it all.... thats what it gets for being so yummy! So I had to make more steak. Here is the marinade I used;

Lime Marinade
1/4 cup lime juice
2 Tbsp soy sauce
2 scallions, thinly sliced
2 Tbsp ginger
1 tsp red pepper flakes

now to assemble the sammies;
Cook the meat to desired doneness (hmmm is that even a word). Once cooked thinly slice the meat
While the meat is cooking chop up two scallions thinly and grate 2 carrots. Mix them together in a bowl. Make up the following sauce;

1 lg garlic clove, minced
1 tsp sugar
1 tsp red pepper flakes
1 Tbsp rice vinegar
1 Tbsp water

Put half the sauce on the veggies and mix.

Toast a hero bun and put carrots mixture and steak slices in. Top with extra sauce and ENJOY!
(Ok yes I know I didnt use Hero Rolls... this is what I had in my kitchen so thats what I used!)
