I thought I had the stuff in my house to make everything... but then I went to make them and I was missing one or two things... so I made something

Dinner on no sleep
I have been away since 5:30 am yesterday... yes yesterday... I am working on my 37th hour of awakeness... I hate it. I have not chosen this crazy fate for myself. It has been thrust upon me by my boys. Mostly Owen. He is teething and wont sleep and is MISERABLE. But the few minutes I can get him to sleep Jaxon is awake... so I have not slept. So I have accomplished alot of nothing... But here is what I managed to whip up for dinner
Sausage and Gnocci
5 Sausages (I used Sweet Basil Italian sausage)
2 Med Onions, sliced
2 tsp garlic powder
1/4 cup Parmesan Cheese
Bring a pot of water to a boil and drop in Gnocci. Cook according to package directions.
In a large pan heat oil and add onion and garlic, cook until onions are starting to caramelize. Remove sausage from casing and add to onions. Cook through.
Once Gnocci is cooked drain it and add it to the onion/sausage mixture and mix in cheese.
Not to bad for no sleep!

BBQ Chicken Nachos
Last week I tried making BBQ Chicken Nachos. They were so good. I love BBQ Chicken Pizza and this was a pretty sweet way to get those flavors into nachos! Dont they look so good???
All you do is take a cooked chicken breast and shred it. Then slice up an onion and carmelize it in a pan. In a small bowl mix 3/4 cups BBQ Sauce with 1/4 cup water. Add the onions and chicken to the sauce and stir to combine. Then top chips with the chicken mixture and then top with Cheese. Bake at 350 until melty!
So good and oh so simple!
I keep on thinking I need to have a party and just serve all these different nachos with a cute little saying like "Mothers are Nacho average woman"
Hmmmm now Im thinking about tomorrow... I really have nothing planned all day... seems like a good time to bust out the craft stuff and go to town! Time to finish up some projects! I still have one of my car mats to finish for my boys and I really need to work on the scrapbooks, but lets be honest I will probably just work on my recipe book!

The Last Olympian
Ok... so I finished this book about a week ago.. but Ive been way to busy with other things to blog about it... but I thought I have to do it before I forget too much about it!
I have finally finished the Percy Jackson series by Rick Riordan. Book 5 did not dissappoint. I thought it was am almost perfect way to end the series. Loose ends were tied up and it even set up his next series... im not sure what the series name will be but the first book is the Lost hero and its about the next generation of Half bloods... but back on track here... Percy...
yes I will complain that it was too much fighting. Right from the get go it was war war war... but really considering the last 4 books have all be building up to this ultimate titans vs Olympians war I guess it was too be expected. Considering all the war I was surprised that not many of the key characters died... Im not sure how I feel about that. Im glad because I like the characters and wouldnt wish them dead... but how realistic is it that all the main people survived a war like that... (yes I did just question the realistic-ness of a war between ancient greek mythology figures)
But the ending was good. It left me happy and even ended how I wanted (which doesnt always happen!) Im looking forward to getting the new series from the library. I was tempted to just buy it when I say I was 204 on the wait list...but as whole I fine Riordan hit and miss... I love percy Jackson, but hated the first book in the Kane Chronicals (and I love Egypt) and now Ive even started one of his adult books and am having a hard time convincing myself to finish it... so I think Ill hold out and wait though the list and read it then... just in case!
My final verdict... read the Percy Jackson series. Its a very easy, no brain read. Which I need as a mother of two crazy boys who only gets to read once they are in bed at 9 and i can barely keep my eyes open myself. But its fun because Im really into mythology and it was a neat treat to see a modern spin on it. (thats why I also LOVE the nicholas Flammel series by Micheal Scott) All and all... book 3 was my favorite!

Sambal Shrimp
This is another one of the recipes I tried from the Food network Magazine... It was so good... I will apologize now because I didnt take a picture, I tried one to see if I liked it and then the next thing I new my plate was empty! yes it was that good. Emeril Lagasse contributed the recipe.
Sambal Shrimp
2 cups sambal Oelek (indonesian style chile sauce... make sure you use the sauce and not two cups of the paste! That would even be too spicy for me!)
1/2 cup sugar
1/2 cup lime juice
1/2 cup olive oil
1/4 cup minced garlic
1/4 cup minced fresh peeled ginger
1/4 cup mirin (sweet rice wine... I used a rice wine vinegar)
2 Tbsp fish sauce
2 Tbsp sesame oil
3 Lbs head on shimp, peeled and deveined (ok... I did not use head on shrimp because thats just nasty to look at!)
2 Tbsp chopped cilantro
2 Tbsp chopped mint
1)Combine the first 9 ingredients in a med bowl. All to stand at room temp for at least 1 hour (or up to 4 hours)
2) Remove 1/2 cup of the marinade and reserve for later. Add the rest of the marinade and shrimp into a resealable plastic bag and all shrimp to marinate for 1 hour
3) Preheat grill to a med heat. Remove shrimp from marinade and grill until cook. (2-2 1/2 minutes a side)
4) Place shrimp in a large bowl and toss with the reserved marinade and cilantro and mint.
ENJOY
**Its winter here... so i didnt grill these... what I did was a took the shirmp and the 1/2 cup of marinade and sauted it in a pan. It was nicely glazed and still saucy enough too!

Mac N Cheese Soup
I love cheese. LOVE IT! I think you can never go wrong with cheese, especially melted cheese... YUMMY. The other night I tried another recipe from the latest Food Network Magazine. It was awesome! Part of me actually is wishing to try one of these recipes and not like it then my recipe collection wont be quite so monsterous!
I loved this recipe because it of all the cheesy goodnes and because it was relatively low cal (at 476 cals per serving) and there was grated carrots in it...but you would never know. The added a nice punch of color and those who are anti cooked veggies (like me and my kids) you get a little veggie boost without even knowing it!
Bare in mind that this is my take on the recipe in the magazine... its pretty darn close but if you are reading the magazine you will notice a changed some things... like always

Mac N Cheese soup
1 cup elbow macaroni
3 shallots, chopped
1 carrot, grated
1/4 cup flour
3 3/4 cup chicken stock
1 1/4 cup milk
6 oz shredded cheese (I used 4 oz of chedder and 2 oz of a pepper jack)
1/4 cup Parmesan cheese
1)Saute the shallots and carrots in a pan until softened. Add flour and cook, stirring for about 2 minutes. Gradually stir in the broth and bring to a boil.
2) add Macaroni and cute until al dente. The broth will also thicken during this time
3) Remove from heat and add cheeses. Stir until melted. Stir in the milk.
VOILA DINNER!

Book Thief
I recently finished the Book Thief by Markus Zusak. It was a pretty decent read. It is a book set in Nazi Germany. (yes Im on a bit of a holocaust kick lately) Its about a young girl who steals books. It describes her life, her foster parents, her everyday adventures, the stress of hiding a Jew, etc etc etc. It took me a few chapters to get used to the writing style. The narrator is death, who is full of interesting tibits.
What did I like most about this book??? Hmmmm... I dont want to minimize what happened to the Jewish people by any means. It was horrific and disgraceful. But I enjoyed reading this book because it reminded me that not all Germans agreed with Hitler. It was almost refreshing to see how some Germans were victims of the Nazis as well. They were put on little rations and if you werent a memeber of the Nazi party you were an outcast and it was next to impossible to find work. Some were brave enough to help the Jews as best as they could. I would like to think that I would be numbered among those standing up to Hitler and his inhuman treatment of people, but as a mother I can honestly say that if joining the Nazi party meant I could feed my children then I would probably join... even if I hated the very thought of it. These people had familes too and Hitler put them in a horrid situation; Support my insanity or your family suffers and dies.
Germans also suffered because we bombed them. In the book it describes several bombings. People huddled together in basements praying for survival and when they emerged all the found was ruined homes and death. Innocent people died because we, the Good Guys, bombed them. I dont think that could have been avoided because Germany was in the grips of Hitler and his mind boggling cruelty, but it just reenforced my belief that War is digusting and filled with victims. There is so much grey in war... who are the winners, who are the losers? I think we all lose.
Markus Zusak was able to hold my attention to the end of the book, despite the tragic nature of the book. His writing style has also grabbed my attention and I have requested another one of his books from the library to see if all his books bare this same style or if he reserved it for the Book Thief. Im excited to read I am the Messenger!

Buffalo Chicken Biscuits
As far as dinners go they dont come easier then this. I got the idea from a friends blog, but hers were more complicated then mine. Im sure they were super yummy, but they night I was making them was an easy, get in and out of the kitchen super fast night. So this is my 5 ingredient version.
Buffalo Chicken Biscuits
1 Pkg refrigerated biscuit dough (I used pillsbury)
1 Chicken breast cooked and cubed
Hot sauce
Cheese, grated
Ranch dressing
Spray a muffin tin with cooking spray and then take the biscuit dough and place one biscuit into each muffin cup. Form dough into a cup. Toss Cubed chicken in hot sauce and then scoop into the dough cups. Top with Grated cheese. Bake according the the biscuit package directions. Serve with Ranch dressing for dipping.

Battle of the Labyrinth
I finished this book a little while ago but have had so many other things to blog about that I thought Id save it for a while... now that Im almost done my next book I figured I should review this one before I do the next one.
Battle of the Labyrinth is book 4 in the Percy Jackson series. I didnt enjoy it as much as the third book... but it was still good. This was all about growth of the main characters and alot of set up for what is sure to be an action back 5th and final book. This book is really all over the place at the same time... there is romance, betrayal, battles, death, new friends and new foes, and even the return of a former 'bad' guy (he was just misunderstood... and I am still sad for poor little Nico)
When book 3 ended I was chomping at the bit to get into book 4. However at the end of book 4 I was ready to take a break from Percy Jackson. Its hard to say if that was because I didnt enjoy it as much as book 3, or if I was just needing something new. I am looking forward to Book 5!
I really did enjoy the mythology introduced in this book. I loved the Calypso story. One thing that this books really thrill me with is the mixture of mythology and modern day. Makes me want to go and research Greek mythology to see what all the stories really are and how all the Gods and demigods fit together... maybe I can make that a project for this year!

I love Sliders
I jumped on the slider band wagon as soon as I saw it pull in. I love the whole idea of sliders. They are so cute on a plate and they are perfect for kids and they are so full of flavor. AWESOME! Tonight I tried another recipe from the Food Network Magazine for Turkey hummus Sliders. They are So good! Plus I got to use my totally awesome slider pan that I got for christmas. It makes 5 sliders at a time and it forms them into perfect little circles... Im in love!
Turkey Hummus Sliders
1 - 1 1/2 lbs ground Turkey
1/2 cup hummus (use one that has alot of flavour like the spicy red pepper kind)
2 tsp Coriander
Mix together and form into sliders.
Makes about 16 sliders
OK OK OK... so there was alot more to this recipe in the magazine... they made a greeky style topping with cucumber and feta and put the sliders on pitas etc etc etc... but all I did was make the patty part and used store bought buns and regular toppings... Hey I am that kind of mom after all.
But they were still super good! I am so glad we have leftovers!
also Ill share my fail of the day... I tried to make cake balls... Martha stewart I am not... The making of the balls was easy... but then the dipping come... Lets just say I should have done this when Owen was napping and Jaxon was on school. I burnt the candy melts and then I only had cheap beyond poverty chocolate and it wouldnt melt right so I couldnt really dip them... now they look like little blops of mud... or something else... they taste fine though...

We Will Miss you Miss Carey!
Today was a sad-ish day for Jaxon. One of his super awesome teachers is moving onto Bigger and better things and today was her last day. I dont know if he fully realizes that she wont be at school with him anymore. Miss Carey is awesome and we will miss having her in class with Jaxon... As a good bye/Good Luck gift I made her a beyond cute little picture frame.
I first saw this frame on the awesome blog called Shanty2Chic. This Blog is new to me and Im loving her! Check her frame out here.
Start with some wood. Mine was a 2x6x8. My Hubby bought me a 2x6 that was 8 feet long and just cut it down... which means I now can me 12 of these beauties to set aside for gifts! Yippie! The wood was just a couple dollars at Home depot.
I love this for so many reasons;
its good for those of us on a budget
its EASY
its fast
Its versatile. It can display childrens artwork, pictures, hold recipe cards while you cook.. or what Im planning for mine... Im going to have it hold out FHE assignments!
maybe Ill have to whip out one of these to take to our Service auction we have coming up next month!

There are crazy simple, really fast and unbelievably inexpensive to make. I am on cloud 9! I think it cost me like $2-$3 to make this. AWESOME eh?!Start with some wood. Mine was a 2x6x8. I also picked up some doll heads/knobs at Micheals to decorate the top. They cost me $2.50 for a 10 Pack and some spray adhesive... it was $10 but I used a coupon and got it for $5 and I will have it for a long long time... it was a big can!
I think on Shanty2Chic she assembled and then spray painted it... but since I dont have spray paint and I was trying to conserve my crafting budget for the month I painted them using some acrylic paint that I already had on hand... it work fine.
Then it was off to walmart for me... I bought some carpet tacks ($3 for a pack of like 100) and some fancy clips ($3 for a 10 pack) oh and I had Tim pick up some burlap from Home Depot when he got the wood... it was $5 but I will NEVER have to buy burlap again!
So I painted the wood and the knob allowed it to dry and then sanded down the edges to give it a distressed look.
next i sprayed the burlap with adhesive and stuck it onto the wood. Once it dried I put on 4 nails so it looks like the burlap is nailed on and it was time to bust out the glue gun ( I love my glue gun!) and glued on the knob and the clip.
Jaxon painted Miss Carey a picture to go with it.

Thai Beef Nachos!
Im pretty sure this wasn't what was planned for dinner tonight, but I had all the stuff and wanted to use it up before the deli meat when gross! So tonight we had Thai Beef Nachos! SUPER YUMMY! In this most recent issue of Food Network Magazine (I think Ive mentioned it once or twice already... they should pay me for advertising!) anyways... in the magazine they had a little pull out for 50 Nacho recipes. AWESOME!
Tonight we tried the Thai Beef. I had to make a few minor changes but it still was really yummy!

Here's the method;
Get some Roast Beef sliced (I had montreal smoked meat which worked just as good) mix meat with some grated carrots and sliced red onion (I used green onion since my red onion was no longer good). In a small bowl combine a couple splashes of lime juice, a dash of fish sauce, some cilantro and mint (I didnt have mint so I left it out... I didnt miss it) and a pinch of sugar. (yeah I know some measurments eh??) Add this mixture to the meat mixture and stir to coat. scoop a small amount into a scoop chip and top with cheese (I used marble, but the recipe called for mozza) Put under the broiler until cheese it melted... serve topped with Peanut sauce!

Salty Goodness
I was lucky enough to have an awesome big brother and he gave me an awesome gift this christmas! he got me a subscription to Food Network Magazine. I got my first issue the other day and I have already picked out several recipes to try!
My parents were supposed to be coming in tomorrow to drop off the rest of the gifts that we couldnt fit in our little dinky car after christmas, but the roads are horrid so Ill be surprised if they make it, so I made some pretzel rolls to have on our sammies and soup dinner with them. Of course the recipe came from the magazine! It was really easy and they taste great. At first I thought it was a bit salty but thats just how a pretzel is. I think they will make yummy sammies.

Pretzel Rolls

1 Tbsp Yeast
2 3/4 cups flour
1 Tbsp sugar
1 tsp Kosher salt
1/3 cup Baking Soda
1) Put 1 cup warm water (110 -115 degrees) in a bowl of a stand mixer and sprinkle in yeast. set to bloom, 5 minutes. In another bowl combine flour, sugar, and salt.
2) add Flour mixture to the yeast and mix (with dough hook) on the lowest setting until dough comes together. Then on Medium speed until dough is elastic and smooth.
3) form dough into ball and place in a large oiled bowl. Turn to coat with oil and cover with a towel and let rest in a warm place until doubled in size (30-35minutes) line a baking sheet with foil or a silicone baking mat (I used parchment) Coat with cooking spray
4) Punch down dough and turn out on a floured surface. Knead until smooth and springs back when poked. (about 1 minute) divide into 4 portions (these are BIG portions) and form into oblong rolls and place on prepared cookie sheet. Cut slits along the top and cover with a towle to allow to rise for 15-20 minutes.
5) Bring a pot of water to a boil and add baking soda (it will foam) add two rolls at a time and poach 2 minutes a side. Remove from water and return to baking sheet, sprinkle with additional salt.
6) Preheat oven to 425 and bake rolls for 20 minutes.

The Titan's Curse
As you can tell I love to read. I took advantage of the help I had over the holidays and got caught up on my reading. I am on cloud 9... For those out there who are sick of my book reviews dont worry... I have a craft project planned this weekend... as long as nothing crazy happens... fingers crossed.
I have come to realize that if I read a series back to back for the first time I read them I often get bitter by the end of them and am totally sick of the characters. Making me think that the last few books arent very good. With that in mind I decided I ws going to space out my reading of the Percy Jackson series. That has been more difficult then I planned it to be. Yes I did just finish book two and now I have finished book 3... But give me credit I did read Boy in the Striped Pajamas in between them. I just cant stay away from Percy Jackson. Rick Riordon just ends his books on such cliffhangers that I HAVE to keep reading the series.
Book Three was GREAT! We are introduced to more of the God's of Olympus and even have to bid a farewell to one of the characters I have grown to love... although I wouldnt be surprised if they pop up in later books too. I have to give Rick Riodon credit though... for a male author he really hase alot of fierce girl power in this book. I loved it.
In Titan's Curse we meet Artimes and her Hunters (which are all female) and they go an a special quest in search of a monster that turns out to be a quest to save the world. Percy and Annabeth and Thalia help out too of course. Kronos is getting more and more closer to rising and he and Luke are having more and more success if recruiting monsters, half bloods and even some gods to their army. We even get to see a mortal with a special gift for seeing through the Mist. She seems to only have a bit role in this book but she was made to be more then just a passer by which makes me wonder if she shows up again in later books.
The ending was AWESOME! I had planned on reading one or two books before moving onto book 4 But I dove right into book 4.... and now I am pages away from its ending....
Remember book one didnt grab me all that much... but books 2-4 have been awesome! So even if you dont get hooked by book one try book 2... I bet you will end up reading all 5!

Christmas Throw back
I found this picture of the gift I made for my dad in my file of pictures still to blog... so I dont think I ever shared this... if I did... sorry for repeating myself.
My Dad is horrible to buy for. He and my mom have worked hard their whole lives and now are in a position where really if they really want something they can go get it. So I am always perplexed as to what to get him. The man doenst even really have many hobbies! But like most people in my family he LOVES to eat and snack and as an added bonus He loves his two little grandkids, which I am lucky enough to be the mom of! So I use that alot.
I found some glass pasta sauce jars (the lids where white I didnt even have to paint them!) then I labeled them and found some pictures to go along with them and filled them with my dad's favorite treats. Now he can take them to work and display them on his desk and have a snack while admiring his funny grandboys!
This was super easy and beyond cheap! I needed pasta sauce anyways and it only took one sheet of cardstock to cover all three jars!

The Scorch Trials
WOW! Thats all I can say about this book... WOW! James Dashner really out did himself with this one. I loved it... no love isnt even a strong enough word. I was hooked right from the beginning. It only took me a few days to get through it. I was livid with the ending but only because it was such an amazing cliff hanger and the third book isnt out yet so now Im left wondering. AWESOME
This is the sequel to The Maze Runner, which I blog about a little while ago. It was so good! In this one we find Thomas and Theresa seperated and sent on a new trial so see who will survive, group A (the Gladers from the maze Runner) or Group B (a group of girls who have lived the same thing as the boys in group A but they are all girls.) They have to cross a section of the earth known as the Scorch as it was completely fried by a sun flare and considered uninhabitable and make it to a safe haven. The Scorch is also where the people infected with the disease knowns as the Flare are sent to die. Supposedly the Maze and now the Scorch trials are all part of a bigger plan to help WICKED and Humanity find a cure for the Flare. I am still trying to sort that out.
This book is filled to overflowing with betrayal and mistrust. It left me with so many questions that my head spins and I am DYING for book three! I am so entralled I dream about this! Who do I believe? Who will survive? Will the Flare be cured?? and above all.....IS WICKED GOOD?

Hot Hippo
A new year also means its a new month... which means I give my boys a new book. But since its a new year we have moved onto a new theme (last year it was Robert Munsch) This year its african Folk Tales. There is a series out there by Mwenyth Hadithi which is Kenyan (I think) for Story teller. The aristry that goes along with these tales is fun I love them. We have taken out a couple of them from the library and jaxon really like them but we didnt own any yet so I thought it would be a good series to work on collecting.
This month we started with Hot Hippo. Its a fun tale explaining how the Hippo came to live in the water and why he is always opening his mouth so wide.
I also really like doing these books because it gives me an opportunity to teach my boys about another culture. I think its important to expose children young to many different tastes and cultures and people. I am raelly looking forward to these books this year!

First Week in a New Year
Here we are the first Sunday of the new year which means its time for me to figure out what my family will be eating for the next week. This really wont be hard since my mom stocked me up with food before I left her house so I really dont have to go grocery shopping this week! Yippie!
Monday - Crackers and Sausages and pickles and cheese dip!
Tuesday - Breakfast (Sausages and waffles)
Wednesday - Chicken Burgers and Fries
Thursday - Egg Sammies
Friday - Soup and grilled Cheese Sammies
Saturday - Leftovers
Sunday - I am still thinking on... I dunno if mom and dad will be here or not... hmmm....
Also as I sit here blogging on the only spot of carpet I can find I dread the start of a new week which will mean... school, cleaning, organizing all the new Christmas gifts, taking down christmas decorations and of course starting work on my HUGE list of new goals and projects. Sounds like this week will fly by since I am so busy! But thats how I like it!

Happy New Year!
Have you miss me??? Ive been partying it up with my family in Edmonton and just was way to exhausted to blog. So I thought Id take some time off and then start up again in the new year... and here we are.
Did you all have a fun New Years? I almost didnt make it. I am not a night owl and so staying up past 10pm is a HUGE achievement for me! but I did it... I made it to like 12:15...Yippee!
Normally this is the time of year that people make goals for the upcoming year. I love setting goals. Its like a compulsion... Im always making goal/project lists. So I cant say now that its new years I have set a bunch of new goals. For me its a continuation of the goals I am already working on... So here is my list
1) Get Published (always!)
2) Lose 15 lbs... it was only 10 before the holidays hit... now I have more work to do!
3) Learn the following skills;Make Jewelry, use my sewing machine, knit, make stained glass, cake decorating, quilting (I dont think Ill learn all that this year though)
4) Read my scriptures better
5) Update my scrapbooks (these have fallen behind as I was be busy with christmas craft project)
6) Complete as many oth craft projects as I can... I have a list of like 50 or something!
7) Play more with my kids!
yeah Im insane I know!
