Meatballs

Ok... so I totally bailed on the crockpot tonight and just defrosted a freezer meal. It was one of those days. but here is what I was planning on making, and I know its a REALLY good recipe since its one Ive eaten and loved since I was a kid!
BBQ Meatballs

1 1/2 lbs ground beef
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup oatmeal
1 egg, beaten

sauce;
1 cup ketchup
4 Tbsp Brown sugar
4 tsp prepared mustard

Combine the first 5 ingredients and make meatballs. Brown meatballs in skillet then place into slowcooker. Mix sauce ingredients and pour over meatballs. Cook 4-6 hours on low. Serve over rice.

Big thanks to all the ladies who came out to our attitude fo gratitude night tonight. I always enjoy your company! It was a fun night. Remember;
"Absence og gratitude it the mark of the narrow, uneducated mind."

What to Eat!

Have I mentioned that I love food??? Today I realized that my fridge and pantry are running low... ok low for me. Which means I can go grocery shopping! I love grocery shopping! So I figured since I was doing a big trip anyways I can get some of the stuff I was missing for extra yummy food. We will be eating good this week!
Monday - Chicken Ceasers
tuesday - Lasagna Ciabattas
wednesday - Funky Buddah Chicken and Rice
Thursday - a birthday BBQ with the inlaws to celebrate my littlest man turning 1
friday - Creole Pasta with shrimp
saturday - A bbq with my family to celebrate the big birthday!
Sunday - The traditional left overs!
 Sounds super good eh?? Should I be expecting some of you to pop over for dinner? :P

I taught in church today. I love teaching! It was on Elder Hales talk "Our Duty to God:The Mission of Parents and Leaders to the Rising Generation. It's a great talk. You all should read it!  here is a quote I love! "It is Impossible to overestimate the influence of parents who understand the hearts of their children."

HAPPY WEEK!

Quote of the day

I recently had a dicussion with my husband, it all started when I posed the question "Would you treat me any differently if I were dying?" He answered "Of course" I found that his response made me very sad. No one knows when life is going to end, I mean I could get hit by a bus tomorrow. I thought about this while we talked and have come to the conclusion that I would change very little about my life if I knew I was dying. I love life. (Sure I have my trials... but its all part of the life deal!) I would still make crafts, I would bake for my friends, Id cooke dinner for my husband, Id play hot wheels with Jaxon, and Id dance with Owen. I wouldnt plan any huge trips because I already am doing that. I want to fill my childrens heads with memories now so why would that change if I was dying.
  I am quite happy and content. I think everyone should live their life so that they are happy if they die tomorrow. I also think you should treat others as if they were dying. No Regrets!
  Here us a quote that goes along with my thoughts
"Let us relish life as we live it, find joy in the journey, and share our love wiht friends adn family. One day each of us will run out of tomorrows"
-Thomas S Monson
  These are just my thoughts on the matter... what are yours?

HAPPY FATHER'S DAY

Happy Father's Day to all the days out there. But an extra big Hug goes out to the two greatest men in my life, my daddy and my husband! I love you! Today's little tidbit was not my idea but it was so cute that I had to share it. Today in Nursery my little three yr old Jaxon made his daddy a father's day gift. It was a bottle of Dad's Root Beer with a paper tie attached to it. The tie read "To the World's Greatest Pop" I thought it was adoreable and had to share!

Today is also Sunday. Which means its time for me to organize myself for the upcoming week, part of which means making a menu for dinner this coming week. Doing this just makes my life so much easier. I can make a grocery list and then know I will have everything I need in the house to make meals for a week and I never had to worry come 5pm "Oh no whats for dinner!?"
Here is the menu for this week;
Monday - Homemade Chicken Fingers
Tuesday - BBQ burgers with a Mustard and Dill Potato salad
Wednesday - 5 Cheese Baked Ziti and Cesear salad
Thursday - Shrimp Bowls
Friday - Chicken Korma with Naan Bread
Saturday - we are at a wedding so I dont have to cook
Sunday - Leftovers
I always make sure to have one day of leftovers to clean up my fridge and with church not getting over until 4 Sundays always seem like a good day for it. Also I have tried to have a low to no protien dinner night and one night of seafood a week. Gotta have variety!

Finally today is Sunday... oh the day of rest... yeah right. But I figured since it is Sunday Id share with you a quote that I found today and just love.
"...there is no tomorrow to remember if we don't do something today."
-President Thomas S Monson, "Finding Joy in the Journey" Nov 2008 Ensign pages 84-87
It's a Fabulous talk!
